Lemony Chickpea + Cucumber Salad
Friendly reminder: salads don’t have to include lettuce to be a salad. This is my favorite for a simple, quick, summery lunch when you can’t fathom chomping your way through greens.
Ingredients
⅓ C rinsed chickpeas
½ seedless cucumber, cubed
1 vine-ripened tomato cubed
drizzle olive oil
drizzle red wine vinegar
salt + pepper
squeeze of half a lemon
top with micro cilantro
How To
rinse chickpeas and wash tomato, cucumber, and cilantro
cube tomato and cucumber
add chickpeas, cubed tomato, and cubed cucumber into a bowl
drizzle olive oil and red wine vinegar on top, stir
season with salt and pepper and squeeze of half a lemon, stir
top with micro cilantro
eat with your favorite chips or bread!
