Lemony Chickpea + Cucumber Salad

Friendly reminder: salads don’t have to include lettuce to be a salad. This is my favorite for a simple, quick, summery lunch when you can’t fathom chomping your way through greens.

Ingredients

  • ⅓ C rinsed chickpeas

  • ½ seedless cucumber, cubed

  • 1 vine-ripened tomato cubed

  • drizzle olive oil

  • drizzle red wine vinegar

  • salt + pepper

  • squeeze of half a lemon

  • top with micro cilantro

How To

  • rinse chickpeas and wash tomato, cucumber, and cilantro

  • cube tomato and cucumber

  • add chickpeas, cubed tomato, and cubed cucumber into a bowl

  • drizzle olive oil and red wine vinegar on top, stir

  • season with salt and pepper and squeeze of half a lemon, stir

  • top with micro cilantro

  • eat with your favorite chips or bread!
