Hi, friends!

I hope you’re all staying safe and healthy during this crisis. Every day, hell, every hour brings something new and challenging. My emotions are all over the place, all day. Honestly, I never know when something is going to totally sideline me mentally.

But, there are good moments, too. Today, I consider breakfast one of those good moments. (We have to take them and celebrate them when we can!) Seemingly out of nowhere, I had a desire to make cinnamon apples with some Granny Smiths we were lucky enough to order and receive this week. I have never made them before and went off a hunch, and I was thrilled with how it turned out.

As the apples were cooking, I wondered what they would pair with well. I found some vanilla coconut yogurt and our favorite granola and the humble, simple breakfast apple crumble was born.

Simple Breakfast Apple Crumble

Ingredients

How To

  • melt the butter in a large pan over medium-low heat

  • add peeled and sliced apples to the butter and stir regularly

  • add agave and cinnamon, continue stirring

  • cook until apples are soft all the way through

  • place in bowls

  • top with your preferred vanilla yogurt and granola!
