Simple Breakfast Apple Crumble
Hi, friends!
I hope you’re all staying safe and healthy during this crisis. Every day, hell, every hour brings something new and challenging. My emotions are all over the place, all day. Honestly, I never know when something is going to totally sideline me mentally.
But, there are good moments, too. Today, I consider breakfast one of those good moments. (We have to take them and celebrate them when we can!) Seemingly out of nowhere, I had a desire to make cinnamon apples with some Granny Smiths we were lucky enough to order and receive this week. I have never made them before and went off a hunch, and I was thrilled with how it turned out.
As the apples were cooking, I wondered what they would pair with well. I found some vanilla coconut yogurt and our favorite granola and the humble, simple breakfast apple crumble was born.

Simple Breakfast Apple Crumble
Ingredients
- 2 Granny Smith apples, peeled and sliced 
- 4 TBSP Miyoko’s vegan butter 
- 1 tsp agave 
- 1 tsp ground cinnamon 
- Culina Bourbon Vanilla coconut yogurt, for topping (any yogurt will do!) 
- Purely Elizabeth Blueberry Hemp granola (whatever granola you have on hand works, too!) 
How To
- melt the butter in a large pan over medium-low heat 
- add peeled and sliced apples to the butter and stir regularly 
- add agave and cinnamon, continue stirring 
- cook until apples are soft all the way through 
- place in bowls 
- top with your preferred vanilla yogurt and granola!
